Hi Reader,
We’re gonna try to keep this short and sweet for you. Today, let’s talk about leftovers, and putting the remix on it.
Now, I know there are ALOT of people out there that have this thing with leftovers, like it’s kryptonite and they can’t get near it, but I for one LOVE, LOVE, LOVE leftovers.
You can take it for what it is, great leftovers of something you couldn’t finish, OR… (drumroll please), put the re-mix on it.
I personally think that there are very few things out there that you can’t remix by turning it into a:
I’m gonna give a couple of examples of somewhat common foods that could be remixed.
Baked potato becomes:
Twice baked potatoes
Potato salad
Baked potato soup
Hash Browns
Potato skins
Mashed Potato
Rice becomes:
Fried Rice
Rice Casserole
Rice Pudding
Rice Balls
Stuffing for peppers/zucchini/tomatoes
Roasted vegetables become:
Vegetable Hash
Tossed with pasta
Roasted veggie soup
Roasted vegetable salad
Panini sandwich
What about any leftover breakfast, like
Remix that into a breakfast burrito or quesadilla. Add beans, vegan sour cream, cheese, fresh avocado, cilantro and you’re in business.
Add a side salad and you’ve got lunch. That’s right!
So, as you can see, there’s a second life for your leftovers, still simple, economical, and tasty AF!
So the next time you think, oh no, not this again, remember, just put the re-mix on it.
